The surfaces will. That is the trap. Air and a box fan will dry what you can see while the water that soaked into the concrete slab, wall cavities, insulation, and subfloor stays right where it is. Concrete in particular holds water far longer than people expect, and moisture trapped under flooring or behind drywall is exactly where mold gets started without anyone noticing.
Proper structural drying is a controlled process: extraction first, then commercial dehumidifiers and air movers positioned to pull moisture out of materials, with daily meter readings until everything hits dry standard.
